Peggy Lou's Chicken Divan

PEGGY LOU's CHICKEN DIVAN

INGREDIENTS:

1 Whole Chicken
1 Large package frozen Broccoli
2 Cans of Cream of Chicken Soup (Campbell's recommended)
1 Cup Mayo (Hellman's/Best Food recommended)
1/2-3/4 Cup of shredded sharp cheddar cheese
1 Teaspoon of Curry Powder ** Do this to taste

CHICKEN: Cook chicken and debone, set aside.

BROCCOLI: Cook and drain, set aside.

SAUCE: In a medium sized bowl, combine 2 cans of cream of chicken soup, 1 cup of Mayo. Mix by hand till smooth. Add Curry powder to taste and be sure to add a bit extra when you think you have it just right as it cooks out a bit.

LAYERING: In a 9x13 baking pan/glass - spoon in a little sauce on the bottom and layer as follows:

1) Layer on broccoli, then chicken, then about half the sauce

2) Layer on broccoli, then chicken, then rest of sauce to cover top.

3) Sprinkle top with shredded sharp cheese.

4) Cover with foil and bake for 25-30 minutes at 350 degrees.

5) Remove foil and let cheese brown for a few minutes.

6) Let stand for 5 minutes before serving.

Note: This can be made ahead of time and refrigerated; just adjust length of baking time to allow it to heat through.
